Boudin

New Orleans, Baton Rouge, the mighty Mississippi, the Atchafalaya Basin Parkway and now lunch, while sitting in a rocker at a truck stop west of Lafayette. My first ever taste of boudin...a sausage made of pork and rice. Looks nasty, but it's really pretty tasty. One of the locals asked me how I liked it and when I told him I thought it was great, he giggled and said "we eat good down here." Yeah, they do.
